Creamy Pasta Salad
Ingredients:
- salad macaroni - 8 ounces
- tiny broccoli florets - 1 c
- cucumber, diced - 1/2 c
- red pepper, finely diced - 1/2 c
- black olives, sliced - 1/2 c
- green onion, thinly sliced - 1/4 c
- mayonnaise - 1/2 c
- white wine or plain vinegar - 2 t
- kosher salt - 1/2 t
- freshly ground black pepper - 1/2 t
- sugar - 1/2 t
Instructions:
Cook pasta per directions on package, add a 1 T kosher salt to the water as it cooks. Just before the pasta is done cooking, add broccoli to the pan. Let broccoli boil for about 30 seconds; drain. Rinse well with cold water.
In a bowl stir together mayonnaise, vinegar, salt, pepper and sugar. Add pasta and broccoli; stir well to coat. Add cucumber, pepper and onions; stir again. If needed adjust seasonings. Cover and place in refrigerator until ready to serve. Stir just before serving.
