1 large seedless cucumber, or several small seedless cucumbers
1 t kosher salt
Cut the cucumber into 6-inch pieces, and slice 1/8 inch thick lengthwise. Place cucumber ribbons in a colander and sprinkle with salt. Let sit for 20 minutes. Rinse off the excess salt, pat dry a paper towel. Place cucumbers in a bowl.
2 1/2 T powdered buttermilk
1/4 c mayonnaise
2 T Greek yogurt
1 t lemon juice
1/4 t dry mustard
2 1/4 T fresh dill
2 1/4 T parsley
1 T chopped chives
1/4 t black pepper
In a blender combine all dressing ingredients. Add 1/4 to 1/2 c water (use less for a thicker dressing). Blend until herbs are chopped and ingredients thoroughly incorporated. Pour desired amount over the cucumber ribbons. Store in the refrigerator .
