Fruit Salad with Vanilla Pudding
Ingredients:
- fresh fruit, your choice - 3 - 4 cups
- instant vanilla pudding - 1 - 2 T
- lemon OR lime juice, optional - 2 T
- vanilla OR almond extract, optional - 1/2 t
Instructions:
In a bowl, combine your choice of any variety of fruit and amount desired. (strawberries, blueberries, cherries, raspberries, grapes, apricots, peaches, nectarines, apricots, plums, cantaloupe, honeydew, kiwi, etc.)
Sprinkle 1 - 2 T pudding powder over fruit; toss to combine. (The natural fruit juices will moisten the pudding powder.)
For a tangier salad, add lemon or lime juice; toss to combine. If desired add vanilla or almond extract; toss to combine.
Serve immediately, or cover, place in refrigerator for up to 24 hours before serving.
