Greek Rotini Salad
Ingredients:
- tricolor rotini - 1 pound
- grape tomatoes - 5 ounces
- cucumber, peeled, quartered, sliced - 1/2
- green onions, chopped - 2
- kalamata olives, drained - 6 ounces
- crumbled feta - 4 ounces
- Dressing --
- extra virgin olive oil - 3/4 cup
- red wine vinegar - 1/4 cup
- lemon juice - 1 T
- dijon mustard - 1 tsp
- crushed garlic - 1 tsp
- oregano - 1 1/2 tsp
- salt - 1/2 tsp
- black pepper - 1/4 tsp
Instructions:
Prepare pasta per package directions to al dente, drain, rinse with cold water, drain, pour into a large bowl. Place in refrigerator to cool. Remove, add tomatoes, cucumber, onions, olives and feta, toss.
Prepare dressing -- in a bowl, whisk together all dressing ingredients, pour over salad ingredients; mix.
Cover, place in refrigerator overnight, stir every now and then.
