1 c finely diced tomatoes
1 c finely diced cucumbers, peeled or unpeeled
1 c finely diced parsley
1 c finely diced red onion
In a bowl combine all ingredients.
2 T olive oil
½ t salt
¼ t black pepper
Drizzle olive oil over vegetables, sprinkle with salt and pepper, toss to combine.
If needed add more salt, pepper or olive oil to desired taste.
