Loaded Potato Salad
Ingredients:
- Russet potatoes - 8 medium
- sour cream - 1 cup
- mayonnaise - 1/2 cup
- shredded cheddar cheese - 1 1/2 cups plus extra for garnish
- onion, chopped - 1 small
- bacon, cooked, crumbled - 1 package
- sea salt and fresh ground black pepper - to desired taste
Instructions:
Scrub potatoes and cut into bite sized pieces. Cover with water, boil until fork tender, about 20 - 25 minutes. DO NOT overcook. Drain, cool potatoes and place cooled potatoes in a large bowl, place in refrigerator.
In a bowl, mix together mayonnaise and sour cream. Pour over potatoes, add onions, cheese, salt and pepper to taste. Stir to combine.
Garnish with extra shredded cheese and bacon; serve.
