4 c cooked pasta (your choice)
3/4 to 1 c salad dressing (your choice)
1/3 c yellow pepper, chopped
1/4 c red pepper, chopped
1/4 c shallot, chopped
1/2 c celery, diced
1/2 c carrot, shredded
3/4 c chopped tomatoes
salt and pepper to desired taste
In a bowl combine all ingredients. Mix well.
If salad seems to dry add more salad dressing and mix.
Place in refrigerator for 4 – 8 hours.
Sprinkle Parmesan over top if desired.
