Pepper Slaw
Ingredients:
- angel hair slaw mix - 10 ounce package
- red bell pepper, sliced thin - 1 large
- green bell pepper, sliced thin - 1 large
- orange bell pepper, sliced thin - 1 large
- yellow bell pepper, sliced thin - 1 large
- purple bell pepper, sliced thin - 1 large
- grape tomatoes, sliced - 1 cup
- olive oil - 1/3 cup
- white wine vinegar - 1/3 cup
- sugar - 1 T
- kosher - 1 T
- freshly ground black pepper - 1 t
- basil - 2 t
- oregano - 2 t
Instructions:
Place slaw mix, peppers and tomatoes in a large glass jar or bowl with a lid. Shake to combine; set aside. In a bowl, whisk together oil, vinegar, sugar, salt, pepper, basil and oregano. Pour mixture over salad. Cover and shake well to coat. Store covered in the refrigerator. Slaw is best when made the day before serving.
