Salad Filled Pasta Shells
Ingredients:
- jumbo pasta shells - 18
- salami, sliced - 5 slices
- chopped romaine lettuce OR baby spinach - 4 cups
- sliced grape tomatoes - 1 cup
- chopped red onion - 3/4 cup
- black olives - 20
- asparagus tips, blanched - 1 bunch
- frozen peas, thawed - 1/4 cup
- avocado, diced - 1
- salad dressing, your choice - 1/2 cup to desired taste
- shredded Parmesan cheese OR Feta crumbles - 1 cup plus extra for garnish
Instructions:
Cook pasta per package directions; drain, rinse in cold water, drain again. Place in refrigerator while preparing salad.
In a bowl, combine salami, lettuce, tomatoes, onion, olives, asparagus, peas, avocado cheese; sprinkle salad dressing over top and toss. Stuff the shells with the salad ingredients, place on serving platter, sprinkle extra cheese over shells. Serve with extra dressing on the side.
