Shrimp and Avocado Salad
Ingredients:
- shrimp, peeled, deveined, chopped - 1 pound
- tomato, diced - 1
- avocado, diced - 1
- jalapeno pepper, seeded, diced - 1
- chopped red onion - 1/4 c
- juice from 2 limes -
- olive oil - 1 t
- chopped cilantro - 1 T
- salt and pepper - to desired taste
Instructions:
In a bowl combine onion, lime juice, olive oil, salt and pepper. Let set 5 minutes.
In a bowl combine shrimp, tomatoes, avocado and jalapeno; stir in onion mixture. Add cilantro and toss.
Serve on a bed on lettuce.
