Sicilian Potato Salad
Ingredients:
- potatoes, peeled, cut up - 6 - 7
- chopped oregano - 1 tsp
- garlic, crushed - 2 cloves
- red wine vinegar - 1 tsp
- extra virgin olive oil - 3 T
- plum tomatoes, diced - 8
- red onion, sliced - 1
- black olives, pitted - 10 - 12
- hard boiled eggs, cut into slices - 4
Instructions:
In a saucepan, cook potatoes in boiling water for 12 - 15 minutes, until tender. Drain, cool slightly.
In a small bowl, whisk together oregano, garlic, red wine vinegar,and olive oil.
In a bowl, mix together slightly cooled potatoes, tomatoes, onion, olives and eggs; drizzle dressing over the top. Serve.
