Sour Cream Cucumber and Onion Salad
Ingredients:
- cucumbers - 4 large
- Kosher salt - 1 T
- vadalia onion - 1 extra large
- white vinegar - 1/3 cup
- sugar - 1/3 cup
- sour cream - 1 cup
- freshly cracked pepper - 1/4 t
- dill weed - 1/4 t
Instructions:
Peel cucumbers, slice about 1/2 inch thick. Place in a colander, toss with salt and let rest for at least 30 minutes to draw out some of the water. Rinse salt off, remove as much moisture as possible. Cut onion in half, then cut into thick slices.
Prepare dressing -- in a bowl whisk together vinegar, sugar, sour cream, pepper and dill weed. Place cucumbers and onion serving bowl, add dressing; stir. Cover tightly and store in refrigerator for several hours, preferably overnight, (allowing the flavors to soak in) stir occasionally. Serve cold.
