Strawberry Pretzel
Ingredients:
- crushed salted pretzels - 1 1/2 c
- sugar - 4 T
- butter, melted - 10 T
- sugar - 1 c
- cream cheese, room temperature - 2 - 8 ouncepackages
- vanilla - 1 t
- Cool Whip, thawed - 8 ounce container
- strawberry OR raspberry flavored gelatin - 6 ounce package
- hot water - 2 c
- frozen sliced strawberries OR raspberries - 16 ounce package
Instructions:
With a fork stir together pretzel crumbs, 4 T sugar and melted butter until fully incorporated. Gently press crumbs into the bottom of a 9 x 13 inch baking pan. Bake in preheated 350 degree oven for 6 minutes; set aside to completely cool.
Beat sugar, cream cheese and vanilla until smooth, fold in Cool Whip. Place in refrigerator for at least 1 hour.
In a bowl, pour boiling water over gelatin; stir to dissolve. Stir in FROZEN berries. Place the bowl in the refrigerator for about five minutes. Spoon the gelatin evenly over cream cheese. Return to the refrigerator for at least 1 hour. Serve chilled as a salad or dessert. Best eaten the day it is made.
