Summer Vegetable Salad
Ingredients:
- bowtie pasta, cooked, cooled - 12 ounces
- roma tomatoes - 2 medium
- summer squash - 1 medium
- zucchini - 1 medium
- broccoli crown - 1 medium
- red onion - 1/2 medium
- roasted red peppers - 2/3 of a 15 ounce jar
- olive oil - 1/4 cup
- red wine vinegar - 1/3 cup
- dijon mustard - 1 T
- dried oregano - 1 t
- minced garlic - 1 t
- salt - 34 t
- fresh pepper - to desired taste
Instructions:
Prepare pasta, per package direction, cool. Cut tomatoes, squash, zucchini, broccoli, onion and peppers into bite size pieces mix all ingredients together.
Prepare dressing -- in a bowl mix together olive oil, vinegar, dijon mustard, oregano, garlic, salt and pepper. Pour over salad, toss and serve.
