2-3 medium tomatoes, sliced
1 cucumber, sliced
1 small onion, sliced (if desired)
kosher salt
freshly ground pepper
2 T red wine vinegar
2 T olive oil
In a large bowl place tomatoes, cucumber and onion, mix in remaining ingredients. Place them in a shallow dish, cover and chill in the refrigerator for 30 minutes to let the flavors soak in and chill the veggies.
