1 pound of your favorite shaped pasta
2 medium zucchini, sliced and cut in half
1 c chopped scallions
3-4 ripe Roma tomatoes, chopped
1 T dried parsley
salt and pepper to taste
Boil the pasta in salted water according to package directions. Drain and rinse in cold water.
In a bowl toss pasta and the rest of the ingredients together with the dressing. Salt and pepper to taste.
Dressing
1/2 c Extra Virgin Olive Oil
1/4 c Sherry Vinegar
1 shallot, chopped
1/ 2 clove garlic, chopped
1/2 t salt
fresh ground black pepper to taste
In a blender puree all the ingredients together. Pour over salad and toss.
