Arugula, Chicken Pocket Sandwiches
Ingredients:
- bread OR pizza dough - 1 pound
- arugula or spinach -
- cranberry sauce or jelly -
- cooked chicken or turkey, chunked -
- melting cheese, your favorite -
- salt and pepper - to desired taste
Instructions:
Divide dough into 6 equal portions, roll each portion flat, into a circle. Spread 2 T cranberry over circle, lay desired amounts of chicken, cheese, salt and pepper, (if desired other seasonings) and arugula on one side of the circle. Fold side over to form a sandwich. Brush the tops with water, with a knife cut a line through the top.
Place on lightly coated baking sheet. Bake in preheated 450 degree oven for 9 - 11 minutes, until bottom crust is golden and cheese is melted.
