Black Bean Tacos with Avocado Sauce
Ingredients:
- avocado - 1/2
- cilantro, stems removed - 3/4 cup
- lime juice - from 1
- garlic - 1 clove
- olive oil - 1 T
- honey - 1 t
- salt - 1/8 t
- black beans, rinsed, drained - 2 - 15 ounce cans
- salsa - 1 cup
- cumin - 1 t
- corn tortillas - 8
- lettuce, tomato, onion, roasted red peppers, corn, avocado, cilantro, etc. - your choice of toppings
Instructions:
Prepare sauce -- in a blender combine avocado, cilantro, lime juice, garlic, olive oil, honey and salt. If necessary add a bit of water to thin. Place in refrigerator until serving time.
In a pan on medium heat, heat black beans, salsa and cumin, stirring occasionally, until heated through. (If desired mash beans after heating for a creamy filling.)
To serve -- warm the tortillas, spoon bean mixture in the center of each tortilla, drizzle on avocado sauce, add your favorite toppings; serve.
