Broccoli Grilled Cheese
Ingredients:
- broccoli - 1 head
- garlic, thinly sliced - 2 cloves
- extra virgin olive oil - 2 T
- kosher salt -
- fresh ground black pepper -
- country style bread - 4 slices
- butter, room temperature - 2 T
- shredded Gruyere cheese - 1/2 cup
- aged cheddar cheese - 1/2 cup
Instructions:
Place broccoli florets on a baking sheet, (cut larger florets lengthwise). Drizzle oil over broccoli, season with salt and pepper, toss to coat. Roast broccoli in a preheated 375 degree oven for 7 - 10 minutes, or until it begins to brown.
Heat a skillet over medium high heat. Butter one side of two slices of bread, place them in skillet, buttered sides down. Sprinkle Gruyrre on top of one slice and cheddar on the other slice. Place roasted broccoli on top of cheddar slice. When cheese has melted, take the Gruyere slice and place cheese side down on top of the broccoli. Use a spatula to press sandwich together. Flip sandwich and press down again. Both sides of the bread should be toasted. Repeat with the other bread slices. Remove from heat, cut in half, serve immediately.
