Cauliflower Grill Cheese
Ingredients:
- cauliflower, cut into small florets (should yield 3 cups of cauliflower rice) - 1 small head
- egg, lightly beaten - 1
- mozzarella cheese - 1/2 cup
- fine grain sea salt - 1/2 t
- black pepper - 1/4 t
- butter, room temperature - 1 T
- sharp cheddar cheese, shredded, room temperature - 1/3 cup
Instructions:
In a food processor rice cauliflower florets (evenly chopped not pulverized).
Place cauliflower in a bowl, microwave on high for 8 minutes, until cooked. Place cauliflower in a tea towel and twist and squeeze out as much moisture as you can. (Cauliflower needs to be dry, otherwise you’ll have mushy dough.)
In a bowl combine cauliflower, egg, mozzarella, salt and pepper; mix well. Spread cauliflower mixture onto a baking sheet lined with parchment paper, which is coated with olive oil, shape into 4 squares.
Bake in a preheated 400 degree oven for about 16 minutes until golden. Remove and cool 10 minutes before peeling them off the parchment paper (be careful not to break them!)
Prepare grilled cheese -- heat a skillet over medium heat. Butter the top of each slice of cauliflower bread.
Place one slice buttered side down in skillet, sprinkle on cheese and top with second slice of cauliflower crust bread, buttered side up.Turn heat down a notch and cook until golden brown, about 2 - 4 minutes. Gently flip and cook until golden brown on the other side, about 2 - 4 minutes.
