Cheeseburger with Mushrooms and Cucumber Salsa
Ingredients:
- ground beef - 1 pound
- smoked paprika - 1 tsp
- scallions, sliced thin - 4
- egg yolk - 1
- prepared English mustard - 1 tsp
- olive oil - 1T
- brown mushrooms, trimmed, sliced - 4
- whole wheat buns - 4
- Gruyere cheese - 4 slices
- salsa
- cucumber, roughly chopped - 1/4
- fresh cilantro - 2 T
- pepper - to desired taste
Instructions:
In a bowl, mix together beef, paprika, scallions, egg yolk and mustard, form into 4 patties. Cook burgers to desired doneless.
Heat oil in a skillet, add mushrooms, cook over high heat, stirring frequently, for 5 minutes until browned.
Prepare salsa -- toss cucumber and cilantro together, season with pepper.
To serve -- place burger in bun, top with a slice of cheese, melt, add mushrooms and a spoonful of salsa.
