Cheesy Chicken Bruschetta
Ingredients:
- balsamic vinegar - 1 c
- sugar - 1 t
- large sub buns - 2
- olive oil, divided - 3 T
- chicken breasts, cut into 1 inch cubes - 2 large
- fresh mozzarella, sliced - 4 ounces
- tomatoes, chopped - 4
- cloves garlic, minced - 2
- bunch fresh basil leaves, roughly chopped - 1
- salt and pepper -
Instructions:
In a saucepan bring balsamic vinegar and sugar to a boil, then reduce heat to medium low and simmer. When mixture is thickened and syrupy remove from heat. In a skillet heat olive oil over medium heat; salt and pepper chicken, place in skillet, thoroughly cook.
Split sub buns in half and brush with olive oil. Place oil side up on baking sheet and broil for 1 - 2 minutes, until golden brown. Remove, spread chicken evenly on bun. Top with cheese, place under broiler for 1 - 2 minutes until cheese is melted. Combine tomatoes, garlic, salt and pepper, place over cheese. (If desired warm under broiler.) Top with basil leaves and a drizzle of balsamic vinegar sugar mixture. Serve immediately.
