Chicken Gyros
Ingredients:
- plain Greek yogurt - 1 cup
- cucumber, peeled, seeded - 1
- minced garlic - 1 tsp
- white wine vinegar - 1 tsp
- salt and pepper - to desired taste
- lemon juice - 2 - 3 T
- extra virgin olive oil -
- minced garlic - 2 tsp
- lemon juice - 2 - 3 T
- red wine vinegar - 2 tsp
- extra virgin olive oil - 2 T
- plain Greek yogurt - 2 heaping T
- dried oregano - 1 T
- salt and pepper - to desired taste
- boneless, skinless chicken breasts - 1 1/4 pounds
- pita bread -
- tomatoes, seeded, diced -
- red onion, sliced thin -
Instructions:
Prepare sauce -- shred the cucumber, wrap it in a towel and squeeze to remove as much water as possible. In a bowl, mix together 1 cup yogurt, cucumber, garlic, white wine vinegar, salt, pepper and 2 - 3 T lemon juice. Drizzle lightly with olive oil.
Cover, place in refrigerator for at least 30 minutes to allow flavors to blend.
In a skillet, cook the chicken, transfer to a plate; let rest for 5 minutes. Cut into strips.
In a bowl, combine garlic, 2 - 3 T lemon juice, red wine vinegar, olive oil, 2 T yogurt, oregano, salt and pepper; whisk together, mix well. Add chicken, mix well to coat. Cover, place in refrigerator for 1 hour.
To serve -- heat pitas, top with chicken, sauce, tomatoes and onions. Serve immediately.
