Chicken Gyros
Ingredients:
- plain Greek yogurt - 1 cup
- cucumber, peeled, seeded - 1
- minced garlic - 1 t
- white wine vinegar - 1 t
- salt and pepper - to desired taste
- lemon juice from 1 lemon -
- extra virgin olive oil -
- minced garlic - 2 t
- lemon juice from 1 lemon -
- red wine vinegar - 2 t
- extra virgin olive oil - 2 T
- plain Greek yogurt - 2 heaping T
- dried oregano - 1 T
- salt and pepper - to desired taste
- skinless chicken breasts - 1 1/4 pounds
- Pita bread -
- fresh tomatoes, seeded, diced OR sliced -
- red onion, sliced thin -
Instructions:
Prepare Tzatziki sauce -- chop cucumber in a food processor, wrap in a towel and squeeze to remove as much water as possible. In a bowl mix together yogurt, cucumber, garlic, vinegar, salt, pepper and lemon juice. Drizzle lightly with olive oil, stir, cover, place in refrigerator for 30 minutes for flavors to blend. Prepare chicken -- in a bowl whisk together garlic, lemon juice, red wine vinegar, olive oil, yogurt, oregano, salt and pepper. Add chicken, stir to coat chicken, cover, place in refrigerator for 1 hour. In a skillet cook the chicken. Place chicken on a plate, let rest for 5 minutes. Cut into strips. Heat pitas, top with chicken, tzatziki sauce, tomatoes and onions. Serve immediately.
