Chicken Wrap
Ingredients:
- olive oil - 1 T
- chicken breasts, boneless, skinless - 2 - 5 ounce
- Canadian bacon slices - 2 - 4 slices
- soft flour tortillas - 2
- mayonnaise - 4 T
- spinach - 2 handfuls
Instructions:
Place chicken between 2 sheets of oil covered plastic wrap. With a rolling pin flatten chicken to ¼ inch thick.
Cook chicken on a griddle for 5 minutes, turning once, until golden and cooked through, add bacon to the pan for the final 2 minutes.
Spread each tortilla with 2 T mayonnaise, chicken, bacon and spinach, roll up tightly, secure with toothpicks. Cut in half; serve immediately.
