Corn Dogs
Ingredients:
- yellow cornmeal - 1 1/2 cups
- flour - 1 1/2 cups
- baking powder - 1 T
- baking soda - 1 tsp
- sugar - 2 tsp
- salt - 1 1/2 tsp
- cayenne pepper - 1/2 tsp
- buttermilk - 1 3/4 cups
- eggs, lightly beaten - 4
- hot dogs - 8
- peanut OR vegetable oil - for frying
Instructions:
In a bowl, whisk together cornmeal, 1 cup flour, baking powder, baking soda, sugar, salt and cayenne pepper; whisk in buttermilk and eggs.
Place 1/2 cup flour in a shallow dish. Coat hot dogs in flour, shake to remove excess. Push a 8 inch skewer lenghtwise into each hot dog.
Heat 2 inches of oil to 350 degrees. Stir batter and pour half of the batter in a tall glass, dip hot dog in glass and coat with batter. Allow excess batter to drip back into the glass. Place corn dog in oil, fry for 4 - 6 minutes until golden brown, turn occasionally. Place on wire rack, repeat with remaining hot dogs.
Serve with your favorite condiments.
