Cucumber Cream Cheese Sandwiches
Ingredients:
- cream cheese, room temperature - 4 ounces
- chopped fresh dill - 2 T
- lemon, zest and juice - 1/2
- butter, soft -
- Kosher salt -
- freshly ground pepper -
- high quality white or whole grain bread - 6 slices
- cucumber, seeded, thinly sliced, thoroughly dried with paper towels - 1/2 large
Instructions:
In a bowl, combine cream cheese, fresh dill, lemon zest and lemon juice. Add salt and pepper to taste. Butter each slice of bread, spread cream cheese mixture on each slice. Lay cucumbers on 3 slices of bread, top with remaining slices. Trim crusts off.
Wrap tightly with plastic wrap, place in refrigerator for up to 24 hours. To serve, slice each sandwich into 4 triangles.
