Deep Fried Chicken Sandwich
Ingredients:
- boneless, skinless chicken breasts - 2
- pickle juice - 1/2 cup
- eggs - 2
- milk - 1/4 cup
- flour - 1 cup
- powdered sugar - 2 T
- paprika - 1 t
- salt - 1 t
- black pepper - 1/2 t
- garlic powder - 1/2 t
- celery salt - 1/2 t
- basil - 1/2 t
- peanut oil, for frying - 1 cup
Instructions:
Gently pound chicken until about 1/2 inch thick, cut each breast into 2 equal pieces. Marinate chicken in pickle juice for 1 hour.
In a bowl beat together egg and milk. In another bowl mix together flour, sugar and spices.
Heat oil to 350 degrees. Dip each piece of chicken into egg mixture, then into flour mixture. Fry each piece for 2 minutes on each side, until golden and cooked through. Place on paper towel to drain.
Serve on toasted, buttered buns with pickle slices.
