Fried Pound Cake Sandwich
Ingredients:
- pound cake - 1 loaf
- butter - 1/2 cup
- peanut butter - 12 T
- jam, your choice - 6 T
Instructions:
Cut pound cake into 12 slices. Prepare sandwiches -- spread 1 tablespoon peanut butter on one side of each slice of cake. Spread 1 T jam over the peanut butter on 6 slices of cake, sandwich them together, so that the filling is contained in the sandwich. Place in refrigerator while preparing pan.
In a frying pan, melt 2 - 3 T butter over medium heat. Once bubbling, remove your sandwiches from the refrigerator. Spread butter over the top slice of cake, place sandwich in the frying pan, non-buttered side down. Cook for 1 - 2 minutes, or until the bottom is golden, flip the sandwiches (with a metal spatula) and fry the second side (the second side will take slightly less time). Remove from the frying pan, lay on paper towels to blot the excess butter. Repeat with the remaining sandwiches, adding more butter to the pan as needed. Serve immediately.
