Greek Quesadillas
Ingredients:
- 9 or 10-inch whole wheat flour tortillas - 4
- shredded cooked chicken breast - 1 1/2 c
- feta cheese - 1/2 c
- thinly sliced red onion - 1 c
- chopped cucumber - 1 c
- grape tomatoes, halved lengthwise - 1/2 c
- fresh baby spinach, coarsely chopped - 2 c
- whole flat leaf (Italian) parsley leaves - 1/4 c
- sliced kalamata olives - 1/4 c
- Greek salad dressing (bottled) - 1/2 c
Instructions:
Lightly coat one side of each tortilla with cooking spray. Place tortilla sprayed side down, in a skillet over medium heat. On one half of each tortilla add ½ c spinach, 3/8 c chicken, 2 T feta cheese, ¼ c red onion, ¼ c cucumber, 2 T tomatoes, 1 T olives, 1 T parsley. Drizzle 2 T dressing over each tortilla. Fold tortilla in half and brown. Carefully flip quesadilla and cook until it is lightly browned on both sides. Cut each quesadilla in half and serve.
