Greek Turkey Burgers
Ingredients:
- plain Greek yogurt - 7 ounces
- lemon - 1
- minced garlic - 1/4 t
- dried dill - 1/4 t
- salt - dash
- ground turkey - 1 1/4 pounds
- sun dried tomatoes, chopped - 6 halves
- red onion - 1
- frozen spinach, thawed - 2 ounces
- crumbled feta - 1/4 cup
- dried oregano - 1 t
- minced garlic - 1/4 t
- bread crumbs - 1/3 cup
- egg - 1
- cucumber - 1
- hamburger buns - 6
- salt and pepper - to desired taste
Instructions:
Prepare sauce -- in a bowl, stir together yogurt, ¼ t minced garlic, dill, juice from half of the lemon and a dash of salt. Cover and place in refrigerate to allow the flavors to blend.
Prepare burgers -- squeeze thawed spinach to remove as much moisture as possible, roughly chop the spinach and ¼ of the onion. In a bowl combine turkey, spinach, tomatoes, onion, feta, ½ t minced garlic, oregano, egg, bread crumbs, ½ t salt and pepper, stir until it is evenly combined. Shape mixture into six patties. Grill burgers or cook burgers in a non-stick skillet. Spread yogurt sauce on both sides of the buns, place burger on bun and top with slices of red onion and cucumber.
