Grilled Cheese with Bacon
Ingredients:
- sourdough bread, 1/2 inch thick - 8 slices
- olive oil - 4 t
- cheddar cheese, sliced thin - 4 slices
- bacon, cooked - 8 slices
- Monterey Jack cheese, sliced thin - 4 slices
- Haas avocados, sliced - 2 ripe
Instructions:
Brush one side of 4 slices of bread with olive oil. Lay slices, oiled side down, on a clean work area, layer each slice with cheddar cheese, avocado slices, bacon (slice bacon in half) and Monterey Jack. Top with remaining bread slices, spread oil over top of each bread slice.
Heat a griddle on medium heat until hot. Place sandwiches on the pan, reduce heat to medium low and cook until golden brown, 3 - 4 minutes. Flip sandwiches, cook until golden brown on the other side, 3 - 4 minutes more. Repeat with the remaining sandwiches. Slice sandwiches diagonally, serve immediately.
