Grilled Mozzarella Sandwich
Ingredients:
- fresh buffalo mozzarella, cut into 4 equal pieces 3 x 4 inches - 1 pound
- 1/2 inch thick firm white sandwich bread - 8 slices
- eggs - 2
- heavy cream - 1/2 cup
- fresh thyme, leaves - 1 t
- Kosher salt - 1 t
- nutmeg - grating of
- extra virgin olive oil - 1/4 cup
- butter - 2 T
Instructions:
Place mozzarella on 4 slices of bread. Cover cheese with remaining slices to form sandwiches. Trim crusts off to make 4 inch squares.
In a wide shallow bowl, whisk eggs, add cream, thyme leaves, salt and nutmeg. In a 12 inch nonstick saute pan, heat 2 T olive oil over medium high heat until smoking. Add 1 T butter, cook until sizzling subsides. Dip 2 sandwiches into egg mixture, turn to coat, place in the pan, cook for about 2 minutes, until golden brown. Flip over and brown on the other side.
Place sandwiches on serving plates, repeat process with the remaining 2 T olive oil, 1 T butter and 2 sandwiches. Slice in half diagonally, serve immediately with marinara sauce for dipping if desired.
