Ham, Apple, Brie Quesadillas
Ingredients:
- Dijon mustard - 2 t
- apricot preserves - 2 t
- flour tortillas - 6
- apple, cored, cut in 1/4 inch slices - 1 large
- good quality ham - 6 slices
- brie - 6 ounce wedge
- fresh spinach - handful
Instructions:
Mix together Dijon and preserves; set aside.
Cut the rind from the brie and slice into 1/4 inch slices; set aside. (Brie will slice easier if wrapped and place in the freezer for 20 minutes.) Cover cookie sheet with foil and coat foil with cooking spray. Lay tortillas on cookie sheet, making sure at least half of each is on sheet. Spread 1/2 t of Dijon mixture on half of each tortilla. Layer with a slice of ham, spinach, apples and brie. Fold other half on top. Bake in a preheated 400 degree oven for 4 minutes or until bottom side is browned to your liking. Flip each quesadilla, continue baking for 3 - 4 minutes or until brown. Cool slighly, cut into wedges, serve with leftover Dijon mixture.
