Hawaiian Burgers
Ingredients:
- ground chicken - 2 pounds
- pineapple rings, cut about 1/2 inch - 3/4 inch thick - 6
- pepper jack cheese - 6 slices
- whole wheat hamburger buns - 6
- soy sauce - 1/4 cup
- smoked paprika - 1 t
- chili powder - 1 t
- seasoning salt - 1/2 t
- ground cumin - 1/2 t
- garlic, minced - 1 clove
- chipotle mayo -
Instructions:
In a bowl, combine chicken, soy sauce, 1/2 t paprika, 1/2 t chili powder, seasoning salt, cumin and garlic. Lightly mix with your hands and form into 6 patties, make the patties slightly thinner in the middle and sprinkle with remaining paprika and chili powder. Place in refrigerator for 30 minutes.
Coat grill grates lightly with oil, heat grill to medium heat. Grill burgers 6 minutes per side. Place cheese on burger for the last 1 - 2 minutes of cooking time to melt. Place burgers on a plate, cover with foil to rest. If desired grill buns.
If using pineapple rings place directly on the grill grates over medium heat. Carefully turn after 1 - 2 minutes. If using pineapple chunks, thread onto skewers, grill. Assemble burgers.
