Philly Cheese Steak Quesadilla
Ingredients:
- tortillas - 2
- green pepper, sliced - 1/4
- onion, sliced - 1/8
- butter, divided - 2 T
- deli roast beef lunch meat - 3 slices
- grated Cheddar cheese - 1/4 cup
- grated, Pepper Jack cheese - 1/4 cup
- grated Swiss cheese - 1/4 cup
Instructions:
In a skillet, over medium high heat melt 1 T butter. Add onions and peppers; saute until tender crisp. Remove from heat; set aside.
Melt 1 T butter in skillet over medium heat, add 1 tortilla shell. Sprinkle cheddar cheese on shell, add roast beef, pepper jack cheese, peppers, onions and Swiss cheese. Top with second tortilla shell.
Continue cooking until bottom of first tortilla shell is golden brown. Carefully flip and cook tortilla until golden brown. Remove from skillet. Cut into wedges.
