Pizza Quesadillas
Ingredients:
- flour tortillas - 8
- shredded mozzarella cheese - 8 ounces
- sliced pepperoni - 6 ounces
- pizza sauce - 16 ounce jar
- butter -
Instructions:
Heat a skillet over medium heat and fry pepperoni until crisp. Place on a paper towel to drain. Spread each tortilla with a THIN layer of pizza sauce. (The layer should be thin, when turned over, sauce will not drip.) Sprinkle cheese on top of the sauce on the bottom tortilla. Top with pepperoni and if desired other toppings. Sprinkle with another layer of cheese and place the other tortilla on top (sauce side down).
Preheat a cast iron skillet over medium heat. If desired add a little butter and melt. Place quesadilla in pan and cook 3 - 5 minutes on each side, until cheese is melted and tortillas are crispy. Slice into quarters and serve with warm pizza sauce for dipping.
