Pulled Pork Quesadillas
Ingredients:
- butter, divided - 3 T
- olive oil - 1 t
- yellow onion - 1 large
- brown sugar - pinch
- salt and pepper - to desired taste
- tortillas - 8 small
- pulled pork, cooked - 2 cups
- shredded pepperjack cheese - 2 cups
- BBQ sauce - garnish
Instructions:
In a skillet over medium low heat, melt 1 T butter, add oil and onions, stir occasionally, until they are golden brown and caramelized (about 30 minutes). Add brown sugar, salt and pepper. Remove from heat; set aside.
Lay 4 tortillas on work surface, divide cheese evenly between four tortillas. Top with caramelized onions and pulled pork. Lay second tortilla over pork.
In a skillet over medium heat, melt 1/2 T butter. Add quesadilla and cook for about 2 - 4 minutes, until golden brown on the bottom. Carefully flip the quesadilla over, cook the other side for 2 - 4 minutes, or until cheese is melted. Repeat with remaining quesadillas. Cut each quesadilla into 4 wedges, serve hot with bbq sauce.
