Granola Bars Dipped in Chocolate
Ingredients:
- old fashioned oats - 3 cups
- oil, your choice (canola, melted coconut, grapeseed, etc) - 2 T
- brown sugar - 2 T
- maple syrup - 2 T
- honey - 1/4 cup
- vanilla extract - 1 tsp
- cinnamon - 1 tsp
- nutmeg - 1/4 tsp
- mixture of dried fruits, raisins, nuts, sunflower seeds, etc - 1 1/2 cups your choice
- dark chocolate - 5 ounces
Instructions:
Scatter the oats in a 13 x 9 inch baking pan. Place in a preheated 350 degree oven, toast oats for 15 minutes or until slightly golden.; stir at least once.
Line a 9 X 9 inch pan with parchment paper large enough that the sides will cover the top of the bars once the pan is filled.
While the oats toast, heat oil in a saucepan, add brown sugar, maple syrup, honey, vanilla, cinnamon and nutmeg. Bring to a simmer over medium high heat. Stir until brown sugar dissolves, turn heat off.
Place toasted oats in a large bowl. Pour brown sugar mixture over the oats; stir to coat evenly. Stir in your choice of fruits, nuts, etc. Scrape mixture into the prepared pan.
Fold parchment over the top of the granola in the pan. PRESS granola to fill the corners and flatten, so that it is even across the pan.
Let bars set up in a cool dry place for at least an hour.
Remove bars, place on cutting board, remove parchment. Slice into 6 bars.
Melt chocolate, dip bottom of bars in chocolate, lay on parchment paper until set. Drizzle top with leftover chocolate. Let set.
