1/2 cup margarine
1/2 cup onion (minced)
2/3 cup flour
1 tsp dry mustard
1 tsp paprika
1/8 tsp cayenne pepper
1 tsp salt
4 cups milk
1 (10 3/4 oz) can chicken broth
1 (12 oz) can beer
3 cups sharp Cheddar Cheese (finely shredded)
Popcorn
Melt margarine in large kettle; saute onions until soft.
Blend in flour and seasonings; gradually stir in beer, broth and milk. Cook over medium heat, stirring constantly until mixture boils; stir 1 minute longer.
Add cheese, heat and stir until smooth.
Serve hot garnished with popcorn.
