Broccoli Cheese Soup
Ingredients:
- onion, chopped - 1/2 medium
- butter, melted - 1/4 cup
- flour - 1/4 cup
- half & half - 2 cups
- chicken stock - 2 cups
- fresh broccoli florets - 1/2 pound
- carrots, julienne - 1 cup
- salt - 1/4 t
- nutmeg - 1/4 t
- pepper - 1/2 t
- grated cheddar cheese - 8 ounces
Instructions:
In a skillet, saute onions in butter. In a large pot melt butter, add flour, mix for 3 minutes. While stirring slowly add half & half and chicken stock. Simmer on low for 20 minutes.
Add broccoli, carrots, onions; cook on low for 25 minutes. Season with salt, nutmeg and pepper. Pour into blender and puree. Heat soup over low heat and add cheese and mix till melted.
