Cheesey Potato and Ham Soup
Ingredients:
- potatoes, peeled, diced - 2 cups
- water - 2 cups
- sliced carrots - 3/4 cup
- chopped onions - 1/4 cup
- celery, diced - 3/4 cup
- butter - 1/4 cup
- flour - 1/4 cup
- milk - 2 cups
- salt - 1/4 - 1/2 tsp
- black pepper - 1/4 tsp
- shredded Cheddar cheese - 2 cups
- ham - 1 1/2 cups
Instructions:
In a saucepan, combine potatoes, water, carrot, onion and celery; bring to a boil. Reduce heat; cover, cook for 10 - 15 minutes or until tender.
In a second saucepan, melt butter, stir in flour until smooth. Gradually add milk, salt and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Add cheese, stir until melted. Stir cheese mixture into undrained potato mixture. Add ham; heat through.
