Chicken Tortilla Soup
Ingredients:
- skinless, boneless chicken breasts - 3
- chicken broth - 32 ounces
- Rotel - 2 cans
- black beans, drained - 2 cans
- corn, drained - 1 can
- onion - 1 small
- chili pepper - 1 T
- cumin - 1 T
- garlic powder - 1 T
Instructions:
Place Rotel, black beans, corn, onion and spices in the crock pot. Pour in chicken broth, mix everything together. Place chicken into the crock pot, making sure the chicken is covered with the rest of the contents.
Cook on low for 8 hours or high for 6 hours. About 30 minutes before you eat, remove the chicken and shred. Return the chicken to the crock pot, stir and heat through.
Garnish with Tortilla Chip Strips, Mexican Blend Cheese and sour cream.
