Croutons-
panini bread
6 ounces sliced 4 Cheese Italian Blend
butter, softened
Place one or two slices of cheese on a thin slice of bread and then top with the another slice of bread. Spread butter on both sides of each sandwich.
Heat griddle over medium heat and cook sandwiches until both sides are golden brown, about 4 minutes per side. Remove and let cool. Cut into 1-inch pieces.
Tomato Soup-
1/2 medium onion, chopped
2 T olive oil
3/4 t salt
1/4 t pepper
1/4 t red pepper flakes
4 c chopped or diced tomatoes
3 c chicken stock
1/2 c whipping cream (optional)
Heat olive oil in medium pan over medium heat until shimmering. Add onion and cook until translucent, about 5 minutes.
Season with salt, pepper and hot pepper flakes and cook 30 seconds more. Stir in tomatoes and broth and bring to a simmer. Cook 15 minutes.
Stir in whipping cream.
Serve hot with croutons sprinkled over the top
