Ground Beef Taco Soup
Ingredients:
- ground beef - 1 pound
- butter - 2 T
- flour - 2 T
- milk, divided - 2 1/2 cups
- salt and pepper - to desired taste
- shredded cheddar cheese - 1 cup plus more for garnish
- taco seasoning - 1 package
- Rotel, undrained - 10 ounce can
- black bean, drained, rinsed - 15 ounce can
- crushed tortilla chips - for garnish
Instructions:
In a skillet, cook ground beef, add salt and pepper. Drain and place beef in soup pot.
In a saucepan, over medium heat melt butter; whisk in flour and cook for one minute. Slowly whisk in 1 cup milk, season with salt and pepper, stir mixture until thickened, 3 - 4 minutes. Remove from heat; add cheese, stir until smooth. Set aside.
Add taco seasoning, rotel, beans, cheese mixture and 1 1/2 cups milk into ground beef; stir well to combine. Bring to a light boil, then turn heat down and simmer for 10 minutes, stir occasionally.
Ladle into soup bowls, garnish with crushed tortilla chips and shredded cheese, if desired.
