Tortellini Sausage
Ingredients:
- Italian sausage - 4 links
- minced garlic - 4 tsp
- apple cider - 1/2 cup
- chicken broth - 4 cups
- diced tomatoes - 15 ounce can
- tomato sauce - 8 ounce can
- chopped carrots - 1 cup
- dried basil - 1 tsp
- dried oregano - 1 tsp
- dried parsley - 2 T
- zucchini, sliced - 2 medium
- frozen cheese tortellini - 16 ounce package
- grated Parmesan - garnish
Instructions:
In a skillet, cook sausage, until browned and broken up. Add garlic and cook for 1 - 2 minutes.
Place meat in a dutch oven. Stir in broth, tomatoes, cider, tomato sauce, carrots, basil and oregano. Bring soup to a simmer, cover, cook for 30 minutes. Then stir in zucchini and parsley, simmer for 10 - 12 minutes. Add tortellini and cook for 7 - 10 minutes.
Garnish with grated Parmesan.
