Vegetarian Chili
Ingredients:
- olive oil - 2 T
- onion chopped - 1 mediun
- garlic, chopped - 2 cloves
- chili powder - 2 tsp
- dried guajillo chiles, seeded, stemmed, sliced thin - 1
- apple cider vinegar - 1 tsp
- fire roasted diced tomatoes - 2 - 14 ounce cans
- vegetable broth - 4 cups
- cubed sweet potatoes - 1 1/2 cups
- black, red, pinto or combination - 2 cans
- chopped kale - 1 cup
- frozen corn - 1/2 cup
- lime juice - to desired taste
- salt and pepper - to desired taste
Instructions:
In a dutch oven, heat oil over medium heat. Add onion, garlic, 1/2 tsp salt, cook until translucent. Add chili powder, chiles; stir. Cook until fragrant, add vinegar and tomatoes, stir. Add broth, sweet potatoes and beans. Simmer on low heat until the sweet potatoes are tender (20-30 minutes). Add kale and corn; simmer for 5 - 10 minutes. Add lime, salt and pepper to desired taste.
Serve hot, top with scallions, crunchy tortilla strips, diced avocado, lime slices,etc.
