Spicy Apple Salsa
Ingredients:
- apple cider vinegar - 1/4 c
- apples, peeled and chopped - 3 c
- chopped onion - 1/2 c
- jalapeno peppers, finely chopped (remove seeds if you want less heat) - 2
- red bell pepper, chopped - 1/2
- finely chopped cilantro - 1/4 c
- honey - 1 T
- garlic, finely chopped - 1/2 clove
- ground cumin - 1/2 t
- crushed red pepper - 1/4 t
Instructions:
In a sauce pan over medium high heat, combine vinegar and apples, add remaining ingredients. Bring to a boil, then reduce heat. Gently boil until slightly thickened. Remove from heat, ladle into hot sterilized jars, leave 1/2 inch headspace in the jar, seal. Place jars in boiling water (water should cover jars), boil for 15 minutes. Remove jars from water and let cool. Yields 2 eight ounce jars.
