Avocado with Melted Cheese
Ingredients:
- avocado - 1
- chipotle sauce - 1 T
- lime juice - 1 T
- Parmesan cheese - 1/4 cup
- salt and pepper - to desired taste
Instructions:
Cut avocado in half, remove the stone. With a knife, cut avocado in criss-cross patterns, for sauce to penetrate the flesh.
Pour sauce over each half, top with lime juice, salt and pepper.
In the cavity where the stone was, put a fourth of the cheese on each avocado half. Place under preheated broiler for 2 minutes. Top with remaining cheese and broil for another 2 minutes until completely melted and avocado is warmed through.
Eat hot with a lime wedge and chipotle sauce on the side.
