Baked Avocado Salsa
Ingredients:
- roasted garlic - 12 medium-size cloves
- nicoise olives, pitted - 1 cup
- tomatoes, diced - 2
- olive oil - 2 tsp
- red wine vinegar - 1 T
- Kosher salt - 2 tsp
- fresh ground black pepper - to desired taste
- fresh basil leaves, cut crosswise into thin strips - 6 T
- avocado - 1
- bread crumbs - 1/4 cup
- garlic, minced - 1 clove
- grated Parmesan cheese - 1 T
- chopped basil - 1 T
- lemon juice - 1 T
- salt and fresh ground black pepper - to desired taste
Instructions:
Prepare roasted garlic tomato salsa -- peel garlic, keep cloves whole, cut in half lengthwise. In a bowl, toss together olives, tomatoes and garlic. Mix in the olive oil, vinegar, salt and pepper. Add 6 T basil leaves and toss; set aside. Yields - 2 1/2 cups
In a small bowl, combine bread crumbs, garlic, cheese, basil, lemon juice, salt and pepper; set aside. Cut avocado in half, place 2 T roasted garlic salsa on each half. Top with bread crumb mixture. Place on a baking sheet. Bake in preheated 450 degree oven for 5 minutes. Serve immediately. Servings 2.
Serve leftover salsa, over grilled chicken, tuna, pasta, etc.
